Caroline Brennan likes it raw

In spring 2006, Caroline and her husband Mickey left great jobs in San Francisco (he as a chef; she as manager of the women's fitness apparel store lululemon athletica) to pursue their dream. "We wanted to create a life that allowed us to work together," says the former preschool teacher and yoga instructor. Drawn to Charleston's economy and health-conscious demographic, they opened The Sprout, an organic eco-eatery and juice bar in Mt. Pleasant, in May. Its entrees, salads, pastas and crepes are prepared without cooking so heat doesn't destroy natural enzymes essential to proper digestion. The food is served in biodegradable "grab-n-go" containers, and the space itself (located adjacent to Eco Fitness) is finished with all green, non-toxic building materials. The business isn't all that's sprouting. When asked about her favorite menu items, Caroline says, "I'm pregnant now, so I crave fruit crepes and sprouted almond hummus."
